Winemaking Process:
Night harvesting ensures optimal freshness and preserves the natural aromatics of the Verdejo grape. Fermentation takes place in temperature-controlled stainless-steel tanks, with gentle pump-overs to highlight the grape’s expressive character. A cold pre-fermentation maceration and a minimum of three months of ageing on the lees add depth, texture, and complexity.
